Shells sticking to the egg white can be frustrating, leaving you with uneven, unattractive eggs. Fortunately, there’s a simple hack that chefs swear by to make peeling effortless.

Why Hard-Boiled Eggs Stick

The main reason eggs are difficult to peel is freshness. Very fresh eggs have a lower pH in the albumen (egg white), which causes it to cling tightly to the inner shell membrane. Older eggs tend to peel more easily because their whites have a higher pH, reducing stickiness.

Other factors include:

  • Overcooking or undercooking the eggs

  • Not shocking eggs in cold water immediately after boiling

The Chef’s Simple Hack for Perfect Peeling

Here’s the method that will transform your hard-boiled eggs:

  1. Start with older eggs if possible – 5–7 days old is ideal.

  2. Boil gently – Place eggs in a pot, cover with cold water, and bring to a boil over medium heat.

  3. Shock in ice water – Once cooked (usually 9–12 minutes depending on size), immediately transfer eggs to a bowl of ice water for at least 5 minutes.

  4. Crack and roll – Gently tap the egg on a hard surface and roll it to loosen the shell.

  5. Peel under running water – This helps slide the shell off effortlessly.
